SLOW COOKER CAJUN CHICKEN ALFREDO
Prep Time: 15 minutes
Cook Time: 4 hours
Servings: 8
INGREDIENTS
½ Tablespoon Olive Oil
1 Tablespoon Butter
4 Large Chicken Breasts
½ Teaspoon Garlic Powder
Salt and Pepper, to taste
1-Pound Smoked Sausage or Andouille Sausage, cut into bite-size pieces
1 (22-ounce) Jar Alfredo Sauce
4 Cups Chicken Broth
2 ½ Tablespoons Cajun Spice
1 Tablespoon Minced Garlic
½ Teaspoon Salt
¼ Teaspoon Red Pepper Flakes, optional
16 Ounces Penne Pasta, not cooked
6 Ounces Freshly Shredded Parmesan Cheese
Salt and Pepper, to taste
INSTRUCTIONS
1. Make sure the chicken breasts are dry. Season with salt, pepper, and garlic powder.
2. Heat the olive oil and butter in a large skillet over medium to low heat until the butter is melted. Then add the chicken breasts. Turn the heat up to medium-high and sear the chicken on both sides.
3. To a large slow cooker add the chicken breasts, sausage pieces, alfredo sauce, chicken broth, Cajun spice, minced garlic, salt, and red pepper flakes. Cook on low for 4 hours or on high for 2-3 hours or until chicken has reached the temp of 165 degrees.
4. Remove the chicken from the slow cooker to a plate and allow it to cool and then slice the chicken.
5. Add the uncooked pasta to the slow cooker and cover and cook on high for an additional 30 minutes or just until the pasta is tender.
6. Once the pasta is cooked, stir in the parmesan cheese, sliced chicken, and add additional salt and pepper to taste.
